Peach Chutney
Ingredients:
3 lbs ripe peaches, peeled and cut (6-7 cups)
3 lbs sugar (6 cups)
1 lb raisins (black or white, less is fine if you prefer)
2 heads garlic – chopped and peeled
4 oz fresh ginger – peeled and grated
½ oz dried chiles such as Serrano, seco or chile de arbol
2 cups red wine vinegar
1 Tbsp kosher salt
Preparation:
Combine the peaches and sugar in a large heavy pot over medium heat. Stir until sugar is dissolved. Add all other ingredients. Stir well and simmer for 1 ¼ hours or until peaches have fallen apart and raisins are plump and juicy. Pour into prepared jars and can according to instructions.
